Day 7: Slow Cooked Vegetables

Turns out, I don’t love slow cooked vegetables, and I really, really do not like smokey bacon. That is all.Daily tips:

    1. If you’re cooking with basil get the basil hot, FAST. If you heat it slowly it will turn black
    2. Today Chef Marc said that variety and textural differences are like “punctuation on your palate” - It keeps your palate from getting fatigued. Think of a burrito - eating the whole thing is HARD. But, if you get chips, you can suddenly eat way more. It’s actually more food, but because the texture is differentiated, you stay interested and can eat more. Keep your food interesting, people!
